Chocolate Peanut Butter Cracker Bites

‘Tis the time of year for family gatherings. Which means it’s a busy time of year for families. When you don’t want to show up empty handed, but you also don’t have a lot of time to prep a dish in the kitchen – you make these.

These aren’t your traditional chocolate peanut butter bites. What makes this delicious recipe so different from others is the addition of Ritz crackers. The crackers add a pleasant texture and perfectly compliment the saltiness of the peanut butter and the sweetness of the chocolate.

You can literally whip these up in 15 minutes. These will need some time to set up though. If you need your cracker bites to set faster, pop them in the fridge or freezer. You can store these cracker bites in a sealed container in your fridge. You can store them for up to 2 weeks. These freeze well too. You can make these ahead and pop them into your freezer for up to 3 months.

If you are headed somewhere that is not nut friendly, then you can totally substitute the peanut butter for SunButter or WOWBUTER

  1. Place wax paper under a cooling rack. You will be placing the dipped bites on this to allow the excess chocolate to drip off, so place it somewhere close to you.
  2. Melt your chocolate over a double boiler or in the microwave . You'll want the consistency to be smooth and thin.
  3. While your chocolate is melting, spread a good amount of peanut butter between 2 Ritz crackers. You are essentially making peanut butter sandwiches with Ritz crackers.
  4. Dip each sandwich into the melted chocolate to coat the entire thing. Place on the cooling rack so the extra chocolate can drip off. Chocolate will dry as it cools.
  5. Before the cracker bites are completely cooled add your decorations. In this case, my girls choose to decorate them with sprinkles. You could also melt white chocolate and drizzle it over the top.
  6. If you need your bites to set faster, pop them in the fridge or freezer. Store these cracker bites in a sealed container in your fridge. You can store them for up to 2 weeks. These freeze well too.
