Okay, so this apple sausage bake recipe is a little out of the ordinary for me to post. I’m usually all about the super simple takes less than 30 minutes recipes. But sometimes it’s nice to sit down as a family and share a meal that’s not rushed to make. Plus this apple sausage onion ring recipe is too good not to share. It’s the perfect mix of savoury and sweet. The onion adds a nice depth to the flavour profile.
But I can’t take the credit for this recipe. It’s in my family cookbook. My mother in law shared a cookbook with all her children that contained all her families favourite recipes. Some of the recipes are recipes shes developed herself, and some are recipes that have been passed down to her. I’ve changed up a couple things for this easy apple sausage bake to make it my own. The original recipe calls for it to set overnight. That was due to the crackers that the recipe originally called for. I have switched up the kind of crackers I use so that the apple sausage ring doesn’t have to sit overnight.
Even though this breakfast bake doesn’t have to sit overnight, you can make it the night before and chill it in the fridge. I’ve done it both ways, and I have never noticed a texture or taste change to the apple sausage onion bake. You can also change up the type of crackers you use in this easy breakfast recipe. As long as the crackers are the layered flakey kind.
Fun Fact: I actually forgot to buy crackers for this creation, so I used crushed GoldFish crackers. Worked out great. So I guess you can also use 3 snack size pouches of crushed GoldFish crackers. #momwin
Because this apple sausage bake is so savoury, it makes a great option for a weeknight dinner or simple brunch too. You can prepare the whole apple sausage bake the night before, but pop is covered in the fridge instead of the oven. Then the next day you just have to bake it in the oven and breakfast (brunch or dinner) is ready. If I serve the apple sausage breakfast bake for dinner, I usually serve this with rice and a veggie that will pair well with the sweet and savoury of the apple and pork (corn is a great option). Although, you can totally serve this with eggs for dinner, too. This apple sausage round make a great ‘breakfast for dinner’ option!

- 2 Lbs ground pork
- 2 large eggs, slightly beaten
- 1 1/2 cups of crushed Ritz crackers
- 1 cup of peeled grated apple (red delicious works best)
- 1 medium cooking onion, minced
- 1/4 cup of milk
