Quick and Easy BBQ Chicken Stir Fry
Between after-school busyness and just the general chaos that comes with having 4 kids, dinners usually have to be quick and easy to put together, but also healthy and delicious. This healthy BBQ chicken stir-fry is perfect for busy parents like me. Not only is it quick to put together, but all my kids love it!

Instructions
  1. In a large skillet heat oil over medium heat and add the chicken pieces. season with salt and pepper and cook all the way through. Take out the chicken and set aside. 
  2. In the same skillet, add in all you veggies and cook until tender – about 10 minutes. 
  3. Add your cooked chicken back to the pan. Add in the entire bottle of BBQ sauce. 
  4. Stir until well combined, and serve over rice. Top with green onions.
