Mornings in our house can best be described as crazy, chaotic, and unorganized. Trying to get 4 kids ready for the day and out the door on time should really be an extream sport. There is barely any time to dry shampoo my hair and quickly brush my teeth. Nevermind actually eating a decent breakfast. Which is why I love these berry pancake breakfast bars.
These make-ahead pancake bars are healthy and delicious. You can warm them up and top with some maple syrup and serve them for a sit-down family breakfast. Or, if you’re like me and always running late, grab a couple as you run out the door in the morning. There’s no added sugar in these pancake breakfast bars, only healthy wholesome ingredients.
Can You Bake Pancakes In The Oven?
The simple answer to this is yes. But it’s not as simple as mixing up your favourite pancake recipe and popping it in the oven. I used a stoneware pan in my berry pancake breakfast bar recipe. But if you don’t have one, you will need to make sure you grease whatever pan you use really well. Butter or olive oil would work best for this. And don’t forget to grease up the sides of your pan. Also, you’ll want to make sure the batter is spread relatively thin in the bottom of your pan. The batter shouldn’t really be more than an inch thick. Anything more then that might not cook all the way through. Nobody likes a soggy pancake breakfast bar.

- 1 1/2 cups of oats
- 2 cups of milk (or water)
- 1 cup of whole wheat flour
- 2 TBSP of baking powder
- 3/4th tsp of salt
- 2 eggs
- 1 cup of mixed berries (fresh or frozen)
- 1/4 cup of melted butter
