3 Ingredient Creamy Blueberry Coconut Popsicles {Vegan, Gluten Free, Dairy Free}

Summertime is great for so many reasons. Longer days, more time spent outside, and laid back vibes are some of my favourite things this time of year.

But my most favourite thing about summertime is local fresh produce. More specifically, Ontario blueberry season.

Blueberries are one of our favourite fresh fruits in our house. They never last long. The kids gobble them up so fast when they are in the house. Sometimes the fresh blueberries don’t even make it home from the market. They are devoured in the car instead.

But every so often, I get them home and manage to hide them in our fridge well enough that no one spots them. Then I can get into the kitchen and get creative making these delicious blueberry coconut popsicles.

Can we just take a moment and admire the beauty of these homemade popsicles. I love to make them layered mainly just for the look. The contrast of the white from the coconut milk and dark purple from the fresh blueberries really make this DIY popsicle just stunning.

Of course, these popsicles taste just as good as they look. The creamy texture of the coconut milk combined with the sweetness of the blueberries and the zap of tart from the lemon is the perfect flavour combination for summer.

These creamy blueberry coconut popsicles are also only 3 simple ingredients. They are vegan-friendly and dairy and gluten free. Making them the perfect take-a-long to summer BBQ’s and potlucks.

Creamy Blueberry Coconut Popsicles:

Ingredients:

  • 2 cups of fresh blueberries (frozen will work too)
  • Juice from 1/2 a lemon (6TBS of bottled lemon juice will work too)
  • 2 cups of coconut milk

How To Make The Popsicles:

First, fill each popsicle mold 3/4 full with coconut milk. Freeze for 1-2 hours, or until solid.

While the coconut milk is freezing, blend together the blueberries and lemon juice until a thick puree is formed. If you are using frozen blueberries, thaw them first and add in 2TBS of tap water.

When the coconut milk is frozen, add the blueberry and lemon puree to the top. Add the popsicle mold tops and free until frozen.

Instructions

    This recipe is new to me. I haven’t tried mixing coconut milk with berries. Maybe I can try this with strawberry too.

    My kids love to snack on Popsicle especially now that it is Summer. Maybe I can do this with ice cube trays too. LOL

    Omg these look so yummy! I remember my mom used to make popsicles for me and my brothers when we were kids. My kids would probably love these. My husband would hate them because he hates coconut….weird I know!
