  1. Line a muffin tin with muffin liners and firmly push about 1 tbsp of crumbled wafers into the bottom of each muffin liner.
  2. Next beat cream, coffee, pudding, and cinnamon with a whisk for about 2 minutes. Let stand for about 5 minutes, or until thickened, at room temperature.
  3. Fold in prepared whipped cream topping into coffee and cream mixture.
  4. Spoon the coffee and cream mixture into the muffin cups prepared with a crumbled cookie base. Pop into the freezer until completely frozen, About six hours.
  5. Top each wafer coffee dessert bite with melted chocolate. Serve cold. Keep in your freezer in an airtight container for up to four months.
Recipe Notes

Use homemade whipped cream, but don’t add the sugar to the whipped cream
Press down cookie base very well.
Keep frozen until ready to eat (treat this like ice-cream)
