  1. Heat oil in a large pot over medium heat. Add chopped onion and cook until soft (about 3 minutes)
  2. Add in the canned tomatoes, tomato paste, and chicken stock. Bring to a boil stirring often.
  3. Remove from heat. Stir in heavy cream.
  4. Blend with an immersion blender until smooth. Serve hot.
Recipe Notes

To freeze this soup, pour cooled soup into Ziploc bags. Freeze laying flat for up to 6 months.
