Easy Peaches and Cream Cupcake Recipe {Filled Cupcakes}

Peaches and cream is one of those timeless flavour combinations. And for good reason. It works.

Peaches and cream is a familiar smooth texture that’s the perfect amount of sweetness. For me, nothing says it’s summer quite like a bowl of peaches and cream.

Here in Ontario peach season starts in August. Which means our grocery stores will soon be stocked with fresh Ontario peaches. Time to celebrate the peach season with some yummy peach recipes.

One of my favourite way to enjoy fresh local peaches is canned. My mother-in-law makes the best-canned peaches, in my biased opinion.

Another way I love to enjoy our local peaches is in these simple peaches and cream cupcakes.

A decedent cupcake filled with a sweet 2 ingredient peach filling, all topped off with a creamy whipped cream frosting. It’s the best of summer in one (or two) bites.

These peaches and cream cupcakes are so simple to make.

I use a boxed cake mix for the actual cupcake. But I tweak it a bit so my cupcakes taste like I made them from scratch. #MomWin

How To Make Boxed Cupcake Mix Taste Homemade:

  1. Switch out water for milk.
  2. Add an extra egg.
  3. Switch out the oil for melted butter, double the amount.

The filling is made from a combination of fresh peaches (you can also use frozen if that’s what you got on hand) and peach jam.

The creamy frosting is fresh whipped cream sweetened just a bit with powdered sugar.

How To Make Peaches And Cream Cupcakes:

Ingredients:

  • 1 box of white cake mix (see above tips on how to make boxed cake mix more amazing)
  •  Ingredients needed on the box
  • 1 peach, peeled and diced
  • 1 cup of peach jam
  • 2 cups of whipping cream
  • 4 TBSP of icing sugar

Directions:

Prepare and bake the cupcakes as directed.

While the cupcakes are baking, add the diced peaches to a small saucepan. Simmer over medium heat until the peaches are soft.

When peaches are soft, remove the saucepan from the heat. Stir in peach jam until well combined. Set aside peach filling.

To make the holes to fill the cupcakes, gently press an icing tip into the center of the cupcake and pull it out.

Fill each cupcake with about a teaspoon of the peach filling.

In a separate bowl, whip the whipped cream and icing sugar for about 5 minutes (until whip cream texture). Add the frosting to an icing bag, and frost the cupcakes.

    It’s really too bad my daughter doesn’t like peaches more. They are one of my favorite fruits, second to the nectarine. And I would love to make something like this. I might have to try for a work event sometime.
