  1. Prepare and bake the cupcakes as directed.
Peach Filling
  1. While the cupcakes are baking, add the diced peaches to a small saucepan. Simmer over medium heat until the peaches are soft.
  2. When peaches are soft, remove the saucepan from the heat. Stir in peach jam until well combined. Set aside peach filling.
Frosting
  1. In a separate bowl, whip the whipped cream and icing sugar for about 5 minutes (until whip cream texture). Keep cold.
Put Together Cupcakes
  1. To make the holes to fill the cupcakes, gently press an icing tip into the center of the cupcake and pull it out.
  2. Fill each cupcake with about a teaspoon of the peach filling.
  3. Add the frosting to an icing bag, and frost the cupcakes.
