One of our favourite breakfasts in our house is bagels. Unfortunately, with 4 little ones to get out the door every day, we are always in a rush and running late. In order to make our destinations on time, breakfast has to be quick and portable. Prepping everyone’s bagels to go doesn’t work well with our time restraints. Also, that amount of carbs every single morning doesn’t exactly fit into our healthy eating plans for 2018.
I was inspired to make my own bagel bites from a stuffed monkey bread recipe I saw online. If I took a bagel dough, stuffed it with cream cheese, and baked it in the oven; our favourite morning breakfast would be quick and portable. I could make them ahead and we could warm them in the microwave quickly or even eat them cold. But we still had the issue of all those carbs in the morning, and making bagel dough from scratch isn’t exactly a quick job.
I shared my dilemma with a friend, and she shared a delicious bagel recipe that had only 2 ingredients. THAT I could manage.
I whipped up these bagel bites in a matter of 10 minutes and then had them bake for 25 minutes. Mike’s on the road, but my girls ate ALL OF THEM the next morning for breakfast. So it’s safe to say these stuffed bagel bites are a hit. Also, I may have to double the recipe next time.
Quick and Easy Stuffed Bagel Bites
What you will need:
- 1 cup of 0% Greek yogurt
- 1 cup of self-rising flour
- 1 egg beaten
- Cream cheese cubed into 1-inch pieces (or your favourite jam would work too)
- Your favourite bagel toppings (Optional, I just made plain ones this round)
How to make them:
Place all dough balls on a lightly coloured baking sheet. Brush a bit of the beaten egg on the top and add any toppings you wish at this point. Pop it in your oven to bake for about 25 minutes (or until the dough is cooked through). Cool them on the pan, and then store them in the fridge until you want to eat them.
You can warm these up in your microwave oven or just eat them cold. They are great for on the go, and you can make them to your families taste – seeds, plain, cream cheese, jam. There are a lot of possibilities of different combinations of flavours.
