Since it’s Tuesday, I thought I’d share an easy taco salad recipe. Fun fact, I actually got this taco salad with ground beef recipe from my mother-in-law’s cookbook. This is definitely a trend for me. I should seriously get her on this blog sharing her recipes before she starts her own food blog.
This healthy taco salad recipe is pretty straightforward. Grab some crunchy iceberg lettuce, all your favourite taco fillings, and some corn chips to make this tasty taco salad. What makes this dinner idea unique is the 2 ingredient taco salad dressing.
The easy taco salad dressing is a mix of Catalina dressing and traditional taco seasoning. You whisk them up really good and then drizzle over the whole salad. While you can make this easy taco salad ahead of time, I would wait to dress it until you’re ready to eat. Everyone loves a healthy taco salad, but no one likes a soggy taco salad.
This simple taco salad is perfect for summertime. It’s light and full of flavour. This simple taco salad is also very filling. Not something you would normally expect from a salad, which is probably why I always make way too much. Luckily, it keeps very well in the fridge as long as it’s not dressed. Because this taco salad keeps so well in the fridge and doesn’t need to be heated to enjoy, it’s also a great lunch you can prep ahead and enjoy all week. Make it with different taco fillings to change it up again.
For this recipe you might need:
- 1 Lb of ground beef
- 1 head of iceberg lettuce
- Your favourite veggies cut into 1-inch pieces. I use – 2 sweet bell peppers, cucumber, tomatoes, and medium red onion
- 1 bottle of Catalina dressing
- 1 pouch of taco seasoning
- 1 small bag of corn chips
- 1 cup of shredded cheese. I use mozzarella cheese.
