Easy Taco Salad Recipe {With 2 Ingredient Taco Flavoured Dressing}

Since it’s Tuesday, I thought I’d share an easy taco salad recipe. I got this dinner recipe from my mother-in-law. Posing her dinner recipes seems to be a trend of mine, but what can I say – she’s an amazing cook! This taco salad recipe is pretty straightforward. What makes this dinner idea unique is the 2 ingredient taco salad dressing. 

I serve this Mexican inspired salad alone with biscuits (RECIPE), or I make a little less and serve it with some homemade tomato soup (RECIPE) or my cabbage roll casserole (RECIPE).

I love to serve this in the summer because it’s light but filling. It’s perfect for those hot summer days where you don’t feel like cooking, but you are hungry. This taco salad is perfect for those busy nights because it’s so quick to put together.

Ingredients:

  • 1 Lb of ground beef
  • 1 head of iceberg lettuce
  • Your favourite veggies cut into 1-inch pieces. I use – 2 sweet bell peppers, cucumber, tomatoes, and medium red onion
  • 1 bottle of Catalina dressing
  • 1 pouch of taco seasoning
  • 1 small bag of corn chips
  • 1 cup of shredded cheese. I use mozzarella cheese.

How To Make This Taco Salad:

First, cook your ground beef in a large skillet. Add salt and pepper to taste while it’s cooking. Once it’s cooked, drain and keep warm.

While the beef is cooking, add your chopped veggies to your bowl.

Next, add your pouch of taco seasoning to your bottle of Catalina dressing. This is the 2 ingredient taco flavoured dressing.

Then, add your warm beef to the bowl of veggies. Top with your 2 ingredient taco salad dressing, corn chips, and shredded cheese. Toss with salad tongs and serve.

  4. Then, add your warm beef to the bowl of veggies. Top with your 2 ingredient taco salad dressing. Toss with salad tongs and serve.
Recipe Notes

Tips:

  • For an even quicker prep time, you can cook the ground beef a couple days ahead of time and store in the fridge until your ready to make the dish.
  • Switch up the chopped veggies for your family favourites.

    All I can say is YUM. The other thing I can say is that this looks much better than the taco salad we used to make. It’s my go-to on nights when I don’t want to play around with taco shells but have a Tex Mex night.
